General Tso Chicken and Kale Bowl

Ingredients :

  • 1 cup kale
  • 1 cup brussel sprouts
  • 1/2 cup tomatoes
  • 2 tsp salt
  • 1/4 cup Trader Joe's General Tso Sauce
  • 1/2 cucumber
  • pickled onions
  • 1 tbsp hummus
  • 1/2 lemon
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar

Instructions :

1. Get a salad bowl and add the kale. Add salt, olive oil, and apple cider vinegar. Make sure to use your hands to mix your kale (it tastes so much better). Set it aside
2. Pour some olive oil into the pan and sear the chicken and the onion on medium heat until they are nice and golden on the outside. Add a 1/2 cup of water and continue cooking until the water evaporates
3. Turn the heat down and add the Trader Joe's General Tso Sauce. Mix well so that the sauce is evenly distributed
4. Once the chicken is ready, add it to a different bowl and let it cool down. Add the brussel sprouts to the pan and cook until brown and crispy
5. While the Brussel sprouts are cooking, cut up the tomatoes and cucumbers
6. Add the tomatoes, cucumbers, and pickled onions on top of the kale
7. Add the chicken once it has cooled down
8. Make the salad dressing by combining a tbsp of hummus, 1/2 of lemon, and a pinch of salt
9. Pour over your salad, and enjoy!!
