Nutrient-dense Charcuterie Board

Ingredients :

  • 1 cucumber
  • 1 serving of crackers (wheat thins used)
  • 6-8 carrots
  • 1/2 cup chicken salad
  • 2 tbsp sauce/condiment (ketchup used)
  • 2 tbsp hummus
  • 1 salmon fillet
  • 4 oz chicken breast

Instructions :

1. Set the oven temperature to 400 degrees Fahrenheit
2. Wash the carrots and cut them into small wedges
3. Use a paper towel to absorb the water from the carrots
4. While the oven is heating up, cut the cucumbers and place them on a board together with crackers, chicken salad, hummus, and your choice of condiment
5. Bake the carrots in the oven for 30 minutes (flip midway)
6. Grab a large skillet and grill your chicken breast
7. Pat dry the chicken breasts with paper towels and rub the olive oil all over
8. Season with salt, pepper, garlic powder, onion powder, and paprika
9. Add to the pan/skillet and cook one side for 5-7 minutes. Flip and cook the other side the same way
10. Add 1/2 cup of water and cover the pan with a lid. Continue to cook until the chicken is tender
11. Place the salmon fillet on a baking sheet, and set the oven temperature at 400 degrees Fahrenheit
12. Cover the fillet with olive oil and season with salt and pepper
13. Bake in the oven for 25-30 minutes
14. Once everything is ready, place it on the charcuterie board and enjoy!!!
