Shrimp Bisque and Grilled Cheese Sandwiches

Ingredients :

BISQUE

  • 2 tbsp olive oil
  • 1/4 cup white wine
  • 1 lb shrimp (with shells)
  • 3 cups seafood stock.
  • 2-4 shallots
  • 2 garlic cloves
  • 2 leeks (white part)
  • 1 tbsp sundried tomatoes
  • 2 tbsp butter (vegan butter works too if you are going for a dairy-free recipe)
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 1/2 cup heavy cream (coconut milk if you are going for a dairy-free recipe)
  • 1/4 cup white wine
  • 1 tbsp smoked paprika
  • salt and pepper to taste

SEAFOOD STOCK

  • 1 lb shrimp shells
  • 2 leeks (green part)
  • 2 carrots
  • 1 white onion
  • 2 tomatoes
  • 2 celery stalks
  • 2 garlic cloves
  • 3 tbsp parsley
  • 5–6 cups of water
  • salt and pepper to taste

GRILLED CHEESE SANDWICHES

  • 4 pieces of bread
  • 2 tbsp butter (vegan butter works too if you are going for a dairy-free recipe)
  • 6 cheese slices per bread ( 2 American, 2 Swiss, 2 Cheddar - vegan cheese if you are going for a dairy-free recipe)

Instructions :

Stock Instructions :
1. Saute the shrimp shells for a couple of minutes (they should start turning pink)
2. Add the vegetables and saute for 5 minutes
3. Add the white wine and let it simmer
4. Add salt, pepper, and parsley
5. Add water, bring to a boil, and then let it simmer for at least 45 minutes
6. Finally, strain the vegetables, and use the liquid (stock) for the bisque

Bisque Instructions :
1. Use the peeled and deveined shrimp, and season them with smoked paprika, salt, and pepper
2. Sautee the shallots and leeks in olive oil for 5 minutes (approximately)
3. Mince the garlic and add to the pan. Continue cooking for 2-3 minutes
4. Add the seasoned shrimp and cook for 2-3 minutes on HIGH. Add white wine, and cook for another 2 minutes
5. Once cooked, add the stock and shrimp to a blender and add sundried tomatoes (optional)
6. Mix until you reach the desired consistency
7. Grab another pan and add the butter
8. Add flour, and cook for 5 minutes (approximately). Add the tomato paste, mix everything, and then add the heavy cream
9. Add the shrimp mixture to the pan, and mix everything together on low to medium heat

Grilled Cheese Instructions :
1. Grab the toast or the bread you have previously sliced and spread some butter on it (make sure to do both sides of each slice)
2. Add the bread to a pan and cook each side until it is brown and crispy (DO NOT BURN IT)
3. Add the cheese to one of the slices, and cover with a lid so that the cheese melts
4. Once the cheese melts, take the other slice of bread and put it on top of the cheese. Flip it and sear for another minute or so
5. Enjoy!!
